The growing globalization of trade induced to adopt shared rules, peculiarly shaped in the area of food products. Food is, in fact, a peculiar product, as much as it is essential to maintain human life and it is addressed to be ingested by humans.

Moreover in many cases it is produced on the basis of traditional recipes, so that a standardization would induce to lose essential characters. As a consequence, many and complex rules have been introduced, aiming to assure food security and food safety and to guarantee to consumers that products offered and sold are genuine and have the declared qualities. EU introduced relevant rules in this area, systematically oriented to build what has been called European Food Law, introducing a mode! which has been largely influential in international trade.

Food Lawstudies acquired therefore in Europe and Italy a growing relevance, both in terms of academic research and of daily experience. Food Law handbooks have been published, and already ten years ago an Italian Journal of Food Law started to be published, while others studies are frequently published on legai journals of agricultural Iaw, due to the contiguity of those two areas of law. It seems therefore to be the time to start a Food Law Series, including publications in Italian and in English to promote the exchange of experience and knowledge.
